Crossroads Decision - HNC or Another Offer...

Bit of background
I have just completed my NVQ Level 3 Mechanical Technician in the Biotechnology sector and now my work have given me two opportunities, which one should I take:
HNC Mechanical Engineering
Plus points - Good for CV, may make getting a technician job easier
Negatives - Would need to do a bridging course (maths) its 3 years and I will be tied to this company for 3 years.
Or
Been offered experience in the Process side of the plant to eventually jump ship and become a Process operator with Mechanical background.
This would mean 4 on 4 off shifts and a little extra £££
My aim is to be eligible for offshore work, even if I don't necessarily go it would be nice to know I would be desirable if needed.
So what would you do?
