Most track days let you go along and spectate - bookatrack.com appears to be a favourite on here, as they have a very professional but relaxed attitude, but if you check with any of the organisers, I'm sure that they'd oblige.

But...

To really get the feel of the event, you really need to be out in a car. There are a couple of routes to this, either organise to be a passenger for a day at an event or go on an experience day. I did the topcats tuscan experience day a while back and got so hooked that I'm racing this year!

This forum usually has a roll call of who is going to which event, so it may be worth your while introducing yourself offline to one or two members that are at an event near you to see if you can blag a ride or two. Most events make a small charge for you to be a passenger, but you can then passenger in as many cars as you like. People here are very friendly, and wouldn't mind giving you a few laps - don't be dissapointed if one or two say no, there will probably be a valid reason - I only have one seat for instance - others may have already organised a passenger ride!

Prepare to get hooked

You could try a trackday taster which is just for half a day to begin with. They are being auctioned on ebay at the moment for just a £1 - have a look.
