As no one else has had a stab at this yet, I'll offer some opinions.
Most track day organisers allow you to run race prepared cars, so the MSA blue book is possibly your best start.
I would guess that you don't need bumpers or any front lights, but you will need rear brake lights, and rear indicators are often useful on track days.
My track / race car has rear brake lights and indicators only. Only tried it with Palmersport and RMA so far, but no problems encountered.
