Spa / Nurburgring trip

If secure you mean locked away, you would probably be looking for the big hotels with underground carparks that are accessed via barriers or other security measures. My only experience via work with Spa would be La Source hotel right next to the track. They have a big undergrond carpark with access via security shutter.
Nurburgring, try Lindner hotel. Most other carparks at the hotels are generally open access.
Car crime at both spa and the ring is not very common. Supercars and everything below parked everywhere.

As already said by Roy, it is not common to have car crime in any of the 2 locations.
Apart from that, any of the big hotels will provide some sort of car parking.
For Spa, the big ones are Hotel De La Source, Silva, Radisson Blue, Radisson Balmoral but you should be ok pretty much everywhere around town.
RSR organises a trackday on the 3rd of August at the Ring and 6th of August at Spa, so that could work very well for you if you were looking to do it in the summertime.

Not a recommendation as such, but I've always like to stay a number of miles away from the ring so the drive to the track in the morning gets the oil nice and warmed up so can ease straight through the barriers and open the taps.
Also, I've sometimes been guilty of dragging my heals with getting accommodation sorted, so a little further out has proven both available and a bit cheaper.

Hotel an der Nordschliefe is a B&B near Adenau which has garages for the 'Ring, Eddy is a great guy and I am sure he can help, you can also walk to Pinochio's and the comfy corner in the evenings 
As for Spa, I have stayed at La Source, car was in their open car park and Hotel St. Gereon in Malmedy and used public parking in Malmedy (lovely little Belgium town, with great restaurants in the town square).
Spa is only an hour from the 'Ring, so it is easy to move from one to the other.

Not common, but its not unheard of either, years ago indeed nowt happened but now you would be foolish to ignore security, a few nice cars have been pinched & even my very humble track car got broken into & a gearknob & some gauges from the dash nicked..

To that end, a few years ago I stayed here Hotel Wilhelmshöhe. Lovely spot, good food and beer (half English family run place) and a great drive of about 20Km through to Nürburg. They even have proper lockable garages.chopper602 said:

Eddy sold up a couple of years ago, I think he has bought another establishment near the GP circuit but I don't know the details
Hotel an der Nordschliefe is now run by Ohans from Pinnochio's, he's not a petrol head but he is very customer focused and has helped me out in a big way when things have gone wrong
