How hot is too hot?

I have an MX5 1.6 engine in my kit car, the temperature can easily tip 110c after a while.
How hot is too hot and when should I be coming in to let it cool down?

My NC's coolant reaches around 101 when not moving around much. I think the MK1 thermostat is fully open and the fans turn on full at around 100/101 degrees. 110 sounds high but not horribly so

110 degrees is too hot and coming in and letting it cool down isn't a solution. I'd say it's upgrade time. Radiator?
