hypothetically speaking if you were to drop an LSx into the engine bay, what gear box and diff/prop options are there to handle the power?

Buy something else.

The engine is what made the S2000; take that away and you're left with a fairly unloved chassis.

Thirded.

LSx series fit into both MX-5s and RX7's...both of which would make cheaper donor chassis'.

what about that old shed of a vauxhall that got grafted onto an s2k wink

An LSx sk2 would rule the world when it comes to sleepers. OBviously I am not going to do it, the cars a peach but if it were to happen, what diff and gear box options are there? Weight wouldnt be a major issue, the ls are renound for being very light

Cool music to the first video (Filter), but not convinced about the engine - turbos are easy routes to big power, and supercharging the F20C is a better bet as long as you don't want more than ~320-340bhp.

Agree with Dan though - if you're ditching the engine/transmission find a different donor car.
