Bike for my wife

My wife has started looking for a mountain bike, and we've both become overwhelmed with choice! So, I'd be grateful for any of your recommendations!

She's about 5'5" tall, and happy enough to ride a 'man's' bike with a crossbar. She's only going to use it on roads and a few bumpy footpaths, and possibly the odd day out on a forest trail (though I should think it'll spend most its life in the shed!). She wants one that looks cool too, so none of those urban basket-carrying district-nurse style bikes please! Looking at no more than £300. Oh, and she likes red ones best! hehe

Happy to buy online, though ideally she'd like to try before she buys (we're in Hertfordshire).

Firstly, you have to try before you buy. My GF was riding one of my bikes before we bought her's and she hated it. The geometry on a blokes bike does not work for a lot of ladies. So defo try the Women's specific ones. Again we went down the Specialized route, so don't think you can go wrong there.
