I've been riding the tubeless P Zero's for 2 or 3 years now for training and racing, not had any issues. Have just gone to 30mm on the race bike as I want a little extra comfort and grip on the stty roads.

Yes different tubeless wheel and tyre combo's can be frustrating, I wouldn't recommend using a tyre that doesn't install easily ... I had 28mm Schwalbe One's on my Bontrager rims and they were virtually impossible to mount .... if I'd of punctured in the wild, there was no chance of me fitting a tube if the hole hadn't self sealed or with a Dynaplug. I have never heard this about tan walls, sounds like bull to me! :-D

I'm not sure what sealant you've used, I have found very different levels of sealing dependant on the sealant. Muc off is by far the worst I've used ... the smallest of holes doesn't get sealed and has left me having to fit a tube. Stans race sealant and Silca seem to seal smaller holes up well.

So, I would stick with what you know/like.

GP5000s in 28mm needed tyre levers but weren't that hard to fit to my hookless wheels.

Same tyre onto hooked wheels went on without tyre levers. These replaced some Vittoria tyres that went on easily but didn't seal very well to the rim.

I've been using the Performance model of the Hutchinson Fusion 5 11Storm in 28mm for a few years now and been very happy with them. Also used the Hutchinson sealent.

IIRC, only needed a tyre lever to get the last bit of the bead on and I can seat them onto my carbon rims using an ancient track pump. Good grip in the wet - they got me up all the cobbled climbs for last year's filthy Tour of Flanders sportive without dabbing.

How easy or not a tyre can be fitted to a rim depends more upon the rim design than the tyre in my experience, hence so many different views on the subject.

My current combos:

Zipp 454’s and 404’s, Dura Ace C50’s, Hunt 32 UD’s - no problem by hand only for 28mm TR GP5000 and P Zero TLR Race.

Wheelset that was an issue:

Roval Rapide - even with tools a pain to fit the same type of tyres on to.

The GP5000 TL were a bit of a pig to put on my Giant SLR-1 rims, but manageable with a couple of levers. The newer GP 5000 TR were a doddle in comparison, when switching onto my Prime Doyenne wheels I almost got them on without levers (probably could have but easier to just be gentle with a lever).
