£500-£600 budget- leisure bike

I’m after a bike for leisure, it needs to do a mix of stuff as I live in the countryside, so capable on road and off. Nothing too extreme, just dirt paths. I’ve not had a bike for a long time. An ex colleague once told me a brand called Cube are good but I have no idea where to start. Also I’m only a short arse at 5’7. £600 really is top budget.

Depending on what you want to do, and what's on your doorstep, you can choose road, hybrid, hardtail mountain bike or full sus.
It's tempting to suggest buying something like the mountain bike I bought used a few years ago for £200.
The idea being that I'd buy something better when I decided what I really wanted.
One lesson I learned is that 'modern (ish) MTBs with small chainrings wear out the little sprocket at the back pretty quickly if used for commuting! 'Top gear' is quite low and often used a great deal.
But used bikes can be a PITA if you are not handy with spanners and prepared to research everything.
I would say definitely get something with decent hydraulic brakes. (unless you go pretty much in the 'road' direction)
I would suggest keeping some cash aside for a spare pair of wheels and tyres.
Proper off road tyres are silly hard work on tarmac and wear quickly.
Road tyres are not very good on mud.
I use Schwalbe Land Cruisers for road or bridle path and the knobblies which came with the bike in the woods.
I think getting something that's in good nick at a fair price is more important than brand a or brand b.
You may want to sell or get an additional bike when you decide what rides work for you.

Agree with above, If the off road isn't too bad, then I'd look at a Hybrid and fit some suitable tyres if needed.
Lighter and way better ride on the road than a MTB and capable enough for light off road
Quick look at Halfords 'Boardman HYB 8.6 Mens Hybrid' at £575 looks good.
