I have a new 105 11 speed cassette and derailleur from ‘stock’,will an 11 speed chain run smoothly with a 10 speed chain set?

Yes should be fine, afaik chainrings are not speed specific (or they should be 10/11 speed compatible at least)

You have to match chain/cassette/derailieur though due to chain width

Will work fine. My winter bike is 11spd 105 shifters and mechs with a 10spd chainset. Chain is 11spd.

I converted my GT Grade from 10-speed mechanical brakes to 11-speed hydraulics.

Provided you avoid Tiagra 4700 (it uses a different pull ratio), all the derailleurs are 10 or 11-speed compatible as it’s the indexing at the lever that controls the movement at the derailleur, which is considered “dumb”.

With hydraulic brakes, you need to check hose and ferrule types as there’s two types with minimal size difference between the two.

As others have said, check the freehub compatibility too.

Shimano do a document that details what is compatible with what across both road and MTB group sets.

You’d be surprised, there a lot of modularity but there are exceptions.

If you’re buying a full groupset then it should be relatively straightforward.

Another on for you.

I have some 1998 slx shifters which were mated to a 1998 Ultegra derailleur.

Will the shifters work with the new 105 mech or is the shift pull different?

I might try it and see,if I can’t get a concrete answer.

It will be different, as a general rule Shimano 6/7/8/9 tends to work together within reason, 10spd is different on MTB and road due to cable pull, 11spd does not work too well with older stuff.
