Tried this on another forum and it went a bit off-topic very quickly, so having another go here before I splurge my cash wink
Actually wanted for 5 or 6 months' time, but bike stock being what it is these days, thought I'd best get on with it.

Road bike.
Comfort > speed. Lots of broken up Welsh back roads. Edited to add: not gravel bike slow&comfortable!
Just for nice rides out on (hopefully) dry days.
Any frame except steel (I've already got one a perfectly good one of those).
Hydraulic (or hybrid) disc brakes.
Probably 105-ish with a good low granny gear. Considering 1x but will likely chicken out and get a compact 2x.
Available in XL-ish for 6' 4" bloke. (I've had a bike fit. Turns out I'm very flexible and the guy basically said that I'd be able to ride anything close to the right size, with minimal fettling.)

Budget up to £3k (slightly stretchable... less is OK, too wink )

Current leader is the Mason Definition which is pricey but really nice, and hot damn! ... just look at it.
It's a 50th birthday present, so the "hot damn" factor is a good chunk of the matter, seeing as how my requirements are filled by approximately eleventy thousand bikes from about £1k up biggrin

Can anyone tempt me away from the Mason?

That's a very good shout, and spot on the sort of thing I'm after, so it's going on the list biggrin
(A quick Google says availability may be tricky, though...)

I’ve got a Cervelo S3 and love every pedal stroke of it.

It’s fast, stiff, aero and comfy too. Has ultegra groupset with disc brakes with adjustment options for a better fit. The Cervelo S5 just felt too raw for me, and also a fair chunk more expensive.

I test rode a few similar type ( fast aero road bikes ) from different brands and the only one that could get near the Cervelo for comfort was a Ridley Noah disc ( 7k version ).

If you can try a Cervelo, I don’t think you will be disappointed.

Specialized Roubaix Sport? has 105 and hydro discs, future shock stem to take the edge off rubbish roads. Just under your £3k budget too.

Trek Emonda SL6 pro should be within your price range. Bought mine in the summer, really great bike - fast and comfortable. Might be worth having a look at.

The ALR 6 is also a nice option - 2200 with ultegra, "old school" round tubing is a bit different these days.

Yes good call - very nice bike. I sold my ALR to finance my SL. Super comfortable and quick too.

Another vote for the Mason Definition from me too. Its not a lightweight but the ride is sublime (its much smoother than my Parlee). Its supposed to be my winter bike but I happily ride it all year.

My next buke will probably be a Ribble Endurance SL e

60 next birthday, 100kg, living in the hills of North Wales, seems perfect.

You'll end up with much better than 105 kit for your £3k at Ribble.

My CX SL was much less than that and it's got full GRX810 (Ultegra equivalent, including the hydro brakes), carbon bars and seatpost, decent wheelset, has the bar and stem size I wanted etc. No corners cut on the build- threaded BB, XT cassette, branded saddle. The frame is very well finished and has internal routing, hidden seat clamp, flat mount brakes and all the features you expect on a modern frame. I think it handles better than my Cannondale, and is lighter too. I really don't know what you'd get by paying for a bigger/more fashionable name.

If you are looking at Ribble, I'd also look at North Road Cycles based at the Rapha place in Manchester

https://www.northroadcycles.com/

I think your £3k would go further there than some other places
