Recommend me a flat pedal and shoe combo

Evening guys,
After 15+ years of riding clipless, I'd like to try flats with the aim to try and boost my confidence on steep "Enduro" technical trails.
So I was looking at OneUp Composite pedals and I guess some kind of Five Ten shoes. It would be great to have shoes which I can wear all round and are relatively water proof. To be honest, the range of shoes is a little overwhelming to whittle down to one.
What works for you?

Can't go wrong with nukeproof horizon pedals and anything with a grippy sole. Quite long pins that really grip, so much so I have to physically lift my foot off the pedal to adjust position, some shin protection would probably be a good idea! Before I had the horizons I had some dmr v12 pedals and they were fine also, the nukeproofs do grip more though.
DMR Vaults offer lots of grip and feel lovely under foot.
My Burgtec Mk5’s are very good but very expensive. The composite ones on my hardtail are great for £35.
Five Tens offer the best grip, I like the Freerideta but they’re a pain in the arse in the wet. I have the mit tops for winter which are much better.
Shimano flat shoes have a better pedalling sole (stiffer) but at the cost of ultimate grip.

Got some normal freeriders to wear but ill defo look at something else next time
Similar to you in a way, but I was moving back to more off-road riding and needed to move to flats to give me more confidence on the more technical sections. I was on a bit of a budget though after reading plenty of reviews purchased the HT PA03A pedals. Also found some FiveTen Freerider DLX trainers with a 15% off ebay coupon too. During my first 2 rides with the shoes I ended up wading through some pretty deep water and they dried up well.
I have Nukeproof Neutron Evo (I think) composite flats which I like, but haven't tried many other flats to compare.
A mate has just got some OneUp composites which have a bit bigger platform than the Neutrons, I might go that way if I was buying now.
I wear Teva MTB shoes but I don't think they still make them - rubber not as sticky as the 5.10s, but the tread pattern is designed for pins to lock into the sole and they grip well. You have to lift your foot off the pins to reposition, which can be a good or bad thing.
A mate has just got some OneUp composites which have a bit bigger platform than the Neutrons, I might go that way if I was buying now.

Still riding 5:10 FR Pro with a pair of VP pedals with long, shin-denting, pins. Also swapping from flats to SPDs keeps things fresh. Good luck, it’s fun!

A lot comes to personal preference, I tried quite a few - from cheap to not so cheap. Hated Shimano and nukeproof but like the V12 (my shins may occasionally disagree!)My Burgtec bearings are starting to wear - and have some V12s on the shelf

I’m not sure Shimano pedals are that great. Mate of mine had Saints and they were st; undoing themselves, not that much grip etc. The V6/12’s are an old pedal now. The Vault is a far superior pedal to themDmr v8s and v12s are garbage compared to a quality shimano pedal the build quality is atrocious.
And before you fan boys start I own both the v8 and v12 alongside some M8040 flats
