Recommend a hybrid bike
Discussion
Budget?
Do you want drop bars or flat bar? (Comfort v efficiency) Is it a traditional hybrid you want or something more like a gravel bike?
Do you want to travel off-tarmac? (Wheel size)
I agree with going for hydraulic brakes if your budget is reasonable. Personally, I don't see much wrong with Halfords Boardman, but I'm not a brand man and my options were limited by Cycle 2 Work.

The new Calibre Dark Peak due in June at Go Outdoors at £499 looks like a decent bike for the money. They will also be doing a £399 model called the Lost Lad which has 650b tyres. I don't think either model is on the Calibre or Go Outdoors websites but are on the Calibre Bikes Facebook page.
Unfortunately due to the price of hydraulic shifters, your budget might not stretch to hydraulic brakes on a drop bar gravel bike - the Pinnacle Arkose D2 is £1025 and has Tiagra hydraulics. The base Specialized Diverge or Cannondale Topstone models might be available at that price if you get a discount at your LBS but whether that is possible at the moment, is up for debate as bikes seem to be flying off the shelves. Maybe if you can wait until after Lockdown, the situation and demand for bikes might lessen and discounts might become available again but if anything else, I've noticed prices creeping up (Arkose D2 was £1000 a fortnight ago).
A pal of mine has a Boardman Hybrid which he's more than happy with. Boardman also do the ADV8.8 for £750 which got favourable reviews - mechanical disc brakes though.

It's £150 over your perfect budget but has hydraulic disc breaks and simple gearing.

Had good write ups and all I have done is add half clip, half flats. Oh and a Charge Spoon saddle
Reviews gave it 9/10:

Also I'd consider the Merida Speedster from Tredz, mainly because the 1x11 is good and simple if you're not trying to climb anything to steep or do any time trialing, it'll suit most your needs.
