Suitable women’s bike for use with a baby carrier

My wife wants to do some medium distance bike rides with our little one. We have a Hamax Siesta rear child seat.
The cycling will be partly on quite hilly roads, partly on flat muddy tracks.
I don’t know much about cycles and I don’t really know what is the best type of cycle for this type of riding. I think a lighter bike would be better given the hills and I’d rather buy second hand than new and budget for a service. Could spend up to about £300.
Any thoughts/recommendations?

Given the extra weight you are strapping to the bike, I wouldn't worry about getting anything too light.

My wife has a Carrera Sulcata with a seat on the back. She was fine with it, but hasn't ridden it loads. I don't know if it's the frame shape of her bike or the seat and bracket, but it was difficult to get it lined up as the seat has to be up higher than normal (for her) to allow the seat to unclip.
