Things to cycle over in Flanders!...?!

My other half and I are heading to Belgium next week. More specifically, we have an apartment on the outskirts of Kortrijk, about 20km from Oudenaarde. I'm a keen/improving road cyclist of 3 or 4 years, and she is a relative road bike novice with only a half dozen or so 15-20km trips under her belt. We're sticking the bikes on the roof rack and will probably look to take in two or three rides whilst over there.
I'm keen to see and ride some of the cycling sights of the Flanders region, would like to attempt the Koppenberg (etc), but realistically we are probably looking at 40-50km maximum routes. I would much rather have a nice potter about at cruising speed for a few relaxed afternoons with coffee and frites stops and have a nice time with the OH than kill her trying for huge distance rides beyond her comfort range.
Has anyone got any hints, tips, places to see and visit or things to perhaps avoid? The Tour of Flanders museum in Oudenaarde itself will be first port of call I think...!
