Tyre advice, MTB and Hybrid

I need advice on tyres for two different bikes.
1. My 26" mountain bike that is mainly used on trails specificly the monkey trail on cannock chase. The current tyres don't seem to grip, I've dropped the pressure in the rear but it's still sloppy so what would you guys recommend?
2. My wife's 700c hybrid that is ridden on the road but also on fire roads and similar, the standard tyres aren't grippy enough. So what tyre will be free rolling on the road but grippy on muddy or grassy bits of the fire roads? Is there a tyre that will do this job?

I've been really impressed with my Nobby Nic Evo's on my MTB, as I can't be bothered to switch between summer and winter tyres I've found them a great all rounder. Last month did 3 of the 7 Stanes in 3 days and they performed very well over a complete mixture of surfaces, Dalbeatie was VERY rocky, Kirroughtree was a good mix of surfaces and Glentress was a typical trail centre compacted earth and stone affair.
The 700c question might be hard to get right. I have slicks (Gators) and knobblies which I swap over from time to time. The knobblies are actually quite decent on dry "summer" roads (in terms of grip - but they still "buzz" like any other knobbly and slow you down) but lethal on cold wet roads.
You should look to find something with a central knobble-less section with knobbles on the sides I suspect. That ought to give you a decent compromise. Something like the Schwalbe Hurricane:
