The Mrs is talking about us going on Thursday this year, we have never been on a Thursday before. I am guessing that in addition to it being quieter, there will be some things that are not on display.. what would I miss by not going on my usual day?

In short, lots. Thursday is moving motor show day not FOS. This means you might be able drive a car up the hill and you do get to have a look around at lots of stuff without the crowds however..

The rally stage and other hill events aren't open, some cars will be under wraps and others not there at all.

Absolutely agree with this - if you want to do the FoS you need to be there Friday, Saturday or Sunday
