You can see the procedure to remove the airbag/steering wheel here:

As you can see, you can't just remove the airbag as it is center portion of the steering wheel. You could probably disable it and wire a resistor in the airbag harness connector to fool the ECM into thinking it was still connected but I don't know that for sure.

Check with Karl at the Esprit Fact File as I think he did this at one time with a momo wheel.
I would think you could measure the resistance at the plug-in contacts on the airbag itself and that would probably be close to telling you how many ohms resistance that you need but I'm no electronics whiz by any means. The resistor would need to be wired into the plug that plugs into the airbag (or in place of it).
