For some time now I've noticed that my steering wheel squeeks when you turn the steering wheel a lot, eg for tight turning manauveurs {sp???} like parking.

Anyway, I've made an adjustment to the rack track rod ends tonight in order to centre the rack a little better, whilst doing this I've noticed that this noise is in fact coming from the rack itself not the steering column.

What's this likely to be? Is it the rack on it's way out :( or just something that needs greasing or something?

It could be a steering column UJ tightening up.

To test, jack the front of the car up and rotate the steering wheel with the engine off, can you feel any tight spots ? If you can, a steering UJ is most likely seizing up.
