the best way to do it is to go to an Agenzia di Pratiche Automobilistiche and let them do all the paperwork.paperwork needed is the Certificato di Proprietà which the seller needs to sign, and the Carta di Circolazione for which the vehicle licensing office will send you a sticker with the details of the new owner which you will attach to the document.
you'll have to pay lots of fees and taxes. (as an example when I sold my seven the new owner had to pay over 800euro for the transfer of ownership)
the total cost varies depending on how powerful the car is. but for historics there's usualy a much lower reduced fee
