R60 Countryman Cooper S Cooling Fan

In December 2019 I bought my wife a 2011 Mini Countryman Cooper S All4. The car is fitted with the N18 engine, which is on 55k miles.
A day after we purchased it I noticed a coolant leak, which turned out to be the coolant pipe that runs along the back of the engine. Dealer replaced it, fine.
Following the birth of my daughter in Feb 20, and the world collapsing a month or so later, the car didn’t get much use.
Towards the end of summer, it became apparent the Air Con was useless, likely needing at least a re-gas, possible more.
The car does next to no miles, so sorting the air con went on the long finger. Last week I took it to the local Kwik Fit, figuring that if they couldn’t sort it, they’d at least give a clue as to where to start looking.
They fixed it! I now had ice cold Air Con for the first time since in our ownership.
However, I now seemingly have an issue with the operation of the cooling fan.
What I believe should happen is that the cooling fan should operate at low speed periodically when the Air Con is on, and the fan should operate at high speed at temperatures somewhere north of 105 degrees to cool the engine.
What is happening, and remember this has started immediately after the Air Con re-gas, is that the low speed fan comes on as soon as the engine is started, and the high speed fan come on when the Air Con is on, which I don’t believe is correct.
Has any one got any experience of similar?
