actually, you dab the brakes hard to shift the weight to the rear just before you flick the steering wheel.
I can't be certain, but it looks like he reversed hard and slammed the wheel around while still accelerating.

I always do it (on private land your honour!!) by just lifting of the throttle, the weight of the engine and shifting of weight just from lifting off is enough to bring it round
