Did you buy it second hand? it may have had a sealer put in to cure a small leak.
Best test is a pressurisation test. take the expansion tank cap off when cold, replace it, start the car give it a good rev, shut it off immediately and then slowly release the cap - if it hisses at all it will be pressuring which is often a sign HG failure
HG failure will usually (although not always) feature some degree of water loss - other signs will be temperature fluctuations on the temp gauge whilst driving and the heater will not work very well.
Try a coolant change to see if it discolours again
