I have a Noble M12 and am looking to learn how to drive it 'properly'.
Ive never done any kind of advanced driving and would also like to try track driving. I have a IAM driving day lined up through work though.
Can anyone reccomend anyone offering these kind of courses? I dont wanna be spending ridiculous amounts but am willing to pay for the right course/instructors.

An IAM day is a very good place to start for road driving, and if you want to go a bit further then I'd recommend some of the HPC gatekeepers as per the link.

You can also look on www.advanced-driving.co.uk for other recommendations.

One thing I would encourage you to do is to speak to a couple of the instructors / coaches before you decide which one to go with. It helps if you feel a good chemistry with them, particularly as you talk through exactly what you are looking to achieve.

I'd also recommend Don Palmer for some limit handling. Don knows the Noble very well, and is a great coach. He trains at Bruntingthorpe.

You may also wish to consider Don Palmer's and Mark Hales' Masterclass. This is based at Anglesey and is a 2 day course (not in your own car; rather they provide the cars) to help develop circuit driving skills. I did this course a couple of years ago and this is the write up.

Good advice above - I would recommend Carlimits (www.carlimits.com) as excellent for limit handling (airfield-based) and a good value way to explore what your car can do in a safe environment. Andy Walsh used to run a Noble too IIRC.
