Do you want to know how to drive it well on-track or on-road...as they're very different skills (surprisingly).
IMHO, for on-track the best thing to do is to actually book yourself on a trackday and get some instruction early-on from the instructors that'll be on-hand (at least on the 'good' trackdays they will be).
Oh...and leave the ego at home...you'll have someone in a shed of a 205 or Golf breathing down your neck because their car is caged, is worth f-all compared to yours, and because they've done the circuit 10 times and are very familiar with it. Let 'em go, and if they look worth it (and if the speeds are similar) follow them, watch their lines, braking points etc.
On-road...I'll let someone with more experience comment...lots of providers, from IAM/RoSPA to John Lyons' company...
