It depends what you want. If you want to find out how to handle your car while licking the edge of the performance envelope, then I'd suggest Don Palmer as the guru in these matters. If it's more about not having to lick the edge of the performance envelope on the road by screwing things up in the first place, perhaps the IAM or RoADAR or one of the professionals in the field (I won't give a recommendation for very obvious reasons) might be a better choice.
Hugh Noblett (or indeed StessedDave :-)) at Cadence will do you proud. If (and this is an assumption not an accusation) you're finding yourself near the edge of the envelope of any of the cars you mention on the public road then it would be worth focussing on your road driving as well as your limit handling. Cadence can do both (and datalogged too if that's your thing).
