Timelapse roadtrip - how?

I'm doing a classic road rally later in the year (hopefully..) Muggins here has been tasked with the tech
In short, we'd like to do a timelapse from a dashcam, streamed to a website that friends/family can access.
We have a tablet for mapping + rally app so envisage that would also tether to the dashcam.
I've found "webcam.io" which seems to host timelapse from a webcam, but can't seem to find a suitable dashcam.
It is a 48hr classic rally, so, don't want too many device plugged in, or need constant setting up/management.
We would be massively grateful for any pointers.

I timelapsed our entire American road trip
I used a sjcam
This was 6 years ago so things may have changed
Get one with a changeable frequency and practice before you finally go.
Run a permanent 12v supply that remains when engine is off and keys out, a parked time,apse is interesting watching as well as a moving capture
