How do I get the screens in our Discovery to work?

We have two headrest mounted screens installed in our Discovery by the previous owner. The cables for them are run back to the glove box where apparently he used a tablet or DVD player to provide the feed. Sound was via IR Land Rover headphones. I don't believe it's a standard system and was a retro fit.
Connections wise in the glove box we have:
Cigarette/Aux power connection
A USB port
A red and white phono type connection (no yellow)
Is anyone able to help with how to connect an iPhone or even what kind of connection might be needed for a portable DVD etc.

That looks like the aux input and changeover box for a Dension module. If it is, the switch selects between the original fit CD changer and the Dension's inputs. The one that I had came with USB and aux (red and white phonos). Some come with bluetooth inputs too. To use the Dension, the switch has to be in the right position, and CD Changer selected as the source on the original head unit. The CD player's disk select buttons are used as function keys for selecting inputs and modes, and the CD play/pause/skip buttons select folders and tracks.
That's the same module used by Jaguar and others I suspect, designed to allow USB/iPod operation plus input through the RCA sockets.

Dension make a range of add-on modules for the original audio systems fitted to quite a few different makes of car. They add functionality like USB, iPod and aux sockets to stereos that didn't originally have them. Some also add bluetooth music and mobile phone integration. Basically a box that fits into the optical bus of the car and "pretends" to be a CD changer. As well as the base module which has the optical interfaces, they come with a switch box like the one in your pic. The switch toggles between the original CD changer and the Dension module's own input sockets.The module (if that's what is fitted to your car) could be hidden anywhere. In my BMW I fitted it below the passenger side of the dashboard, in my Boxster it was in the front luggage compartment by the CD changer.
Reading the link posted above, the JLR unit is remarkably similar in operation to the Dension unit, so it's probably the same thing.
I'm not aware of Dension making a unit that handles DVD/video though
