So would this be detailed enough to say "I had xx error on xx date and it showed up xx times on that date"? Or will it simply just record the fact that there was an error?
How about historic data such as speed and distance driven between errors?
I'm trying to work out if I can prove that an error did or did not occur and distance travelled between getting the error, resetting it and then getting the error again.

You need to ask TVR about that as it's quite detailed info you need.
I would imagine that the diagnostic software they use at a main dealer can determine mileage, time, date and other stuff that was happening when a fault was logged. The ECU is built by MBE who do a lot of track car ECUs.
