Two things come to mind but neither are exactly what you are asking for.
TrackVRoad's has a system with a little window that shows level.

Not in dash, but you could pit after every few laps to check level.
Perhaps you get a better picture by keeping an eye on Ecu as well as dash info. There are two water temp sensors in different locations, one for Ecu and one for the Dash which normally over reads ~10c.
To do this conveniently, you need Evolli's gadget and software (iirc, you have to build the gadget yourself with arduino bits), or Aide's android phone app (what I use, super convenient).
But it sounds incredibly odd that the level would go down without it showing temp faults and/or it coming out the filler cap as steam due to the pressure loss. So my uneducated guess is that the head cracked and then it lost the water... It might have had a weakness or you over-reved it?

I have EvoOlli's mobile ecu reader and have it connected up 99% of the time (want to wire it in permanently off the radio switched live so that it turns off with the ignition, rather than me trying to remember to disconnect it!). Very useful for lots of things but one of the best things is you get the ECU temp reading which is a lot more reliable than the dash one. Also good to see when the fans are on!

But the mobile version is great (although it is fairly expensive due to the time to assemble, although definitely worth it IMO) to have connected all the time
