Anybody know what the correct plug gap should be for the S6 engine spark plugs and what type I should buy. I believe I have NGK plugs in the car at the moment but don't know their part number.

Oli,

there is various Info out there about spark plugs: NGK 4179 or NGK 4339. The former has a Gap of 0.9mm, the latter 0.7mm.
Since the previous installed ones ijn my car had a Gap of 0.9mm, I chose to buy these again. Got them from autoteilemann.de ("NGK Zündkerze DCPR8E für CERBERA" Part.No. 122297).
Works faultlessly. Hope that helps.
