Thats a hell of alot of oil to be using? Mine is same age as yours though only on 156k miles, uses a fair bit of oil (believe its the turbo oil seals, has been like it as long as i've had the car and gotten no worse) but no where near as much as yours. I use the QX stuff from eurocarparts, cheap enough to keep chucking in and not worry and my engine runs just fine on it, i'm not particularly gentle with it either.
5w/30 sounds a bit thin to me - many years ago, I had an Alfa 33 16v which was meant to be run on some exotic Selenia stuff (0w/30, I recall) - it seemed to piss it out of every seal possible.
I switched to a fully synthetic 10w/40 which sorted my oil consumption straight away.
I reckon you have nothing to lose in trying a quality 10w/40 synthetic.

What's an acceptable level of oil consumption? I reckon my 9-5 Aero uses around a litre every 6-700 miles, which I thought was pretty bad. A litre per 300 miles sounds more like you're running a 2-stroke! Does it smoke much or is it leaking somewhere?
I also currently use the 5w/40 Fully synthetic EuroCarParts stuff - I guess using oil isn't always a bad thing as you're doing a constant oil change which is probably quite beneficial!
Any recommendations for a 10w/40 Fully synthetic oil? Would be interesting to see if it reduces my consumption at all.

a 10w-40 will make sod-all difference to the oil use - the oil leak will be worst when the engine is running and the oil pressured up from the pump. In addition, once hot, the oil is far thinner than when cold, so the lower w number doesn't apply and doesn't affect the rate of loss, either through leaking or burning.
Stick with what the manual suggests 0w-30, 5w-30, 0w-40 or 5w40 and make sure it's fully synthetic.
