I used to be in a relationship with a girl from Magdeburg and she took me to Wernigerode and Quedlinburg which are nice characterful German towns with some lovely old buildings, plenty of good German beer and sausage! If you're in the middle of the Leipzig, Hanover and Berlin triangle, I can recommend.

If you want world-class drinking, it's in Bavaria. Plenty of beer styles
and plenty of it. Litre steins by default and even the women sup half-litres
with their breakfast.
Trier to Koblenz, Stralsund, Rugen, that whole north coast, Berlin, Harz mountains as suggested, Sachsische Schweiz, Meissen, Thuringia, Weimar (Determined Old School Brits can visit Colditz - the locals will think you are nuts/strange but hey ho.) There really are so many fantastic places to go in Germany it’s hard to go wrong. Just avoid the major industrial centres - Neckarsulm comes to mind - but nearby you have Hockenheim, Schwabisch Hall, Langenburg. Go swimming in the Jagst.

Also try Augsburg, lovely place.
Frankfurt was a bit too much like Cologne for my taste.
