IJmuiden to Lübeck

I am undertaking this journey in a couple of weeks and would welcome advice as to the most enjoyable route.
I was minded to take the A1 east to the Dutch/German border, then the A30 to Osnabrück followed by the A1 up to Bremen and beyond to Lübeck.
However, I am considering taking the A1 to the border, then the A31 running north up the German side of the border, followed by the A28 to Bremen, then A1 to Lübeck.
It strikes me that the A31 and A28 are likely to be quiet and unrestricted; whereas the A1 might be very busy and is likely to be subject to a daytime variable speed limit of 120km/h or less.
Advice welcome. If anyone knows a decent family-friendly lunch stop not too far off the road, do recommend it. Germany is a bit of a novelty for me, especially northern Germany. We are only going for a couple of nights and will be doing the journey in a day.
