You have chosen a bad day in France for your journey; fortunately most of it should be heading back to Paris.
You could save yourself a few kms by avoiding Tours and leaving the A28 at Saumur, and travelling down the D147 and D938 via Montreuil-Bellay, Thouars and Parthenay. The road is 90kph but has plenty of overtaking slots and is about as quick as your route, but more pleasant.
You could then stay at http://www.hotelrelaisdubellay.fr assuming they have a room because of end of national holiday. It is about a 5-hour run to St Sebastian from there – I am of course assuming that you are not travelling to Med-side of Spain.
