If you bring it back it will be seen as capital gain and so you will be taxed on it. I think theres something about having an account here under £8000 for you to be safe. Best thing to do is just transfer the money over into an account here from there as it will possibly be seen as spending money. Others will probably be along shortly to add to this. Best thing to do is talk to an accountant/tax expert.
Just before you go overseas (or a short while afterwards) you need to fill in form P85 from the IR, which will notify them of the fact you will be non-resident. Income earned overseas can be remitted back to the UK tax free, provided that you are away for at least a full tax year (April-April), plus provided that you average 90 days or less per year in the UK during the time that you are away.
If you are a higher rate tax payer then you may actually be due a reasonable repayment of overpaid tax if you leave part way through a year, based on a lower taxable income for the year, and as you still get the standard personal allowance etc.
If you decide to take up the job and need professional advice I would be happy to put you in touch with someone.
Can't help much on the dogs, although they may not like the heat much!
