Edinburgh: See, do, drink and eat
Discussion
I just came back from there for the first time, so can let you know from a first time visiters point of view. We stayed at Mecure Point just below the castle and spend most of the first day walking around to find the nice places.
Although we werent really looking Rose street didn't appear to be the gay mile but wasn't that interesting. We didn't really find a best place to go drinking but the hotel bar semed really popular and had a good cocktail list. Not sure if you have kids, but if not we found the club 'why not?' under 'The Dome' to have a good selection of music and people (plenty of fitties).
We ate at a few places but a pub called 'TheWorlds End' on the Royal mile was great. It's small and really old and you will likely have to wait for seating but it's really reasonable and food was great. We walked as far as you could before paying to get into the Castle and tbh we weren't really up for queueing the hour or so it was going to take to walk around what looked like much of the same as the outside. What was worth doing was a visit to the Wallace monument in the centre. If your lucky it's free but if not the £3 is well worth it for the view at the top. It is really quite scary at the top!
We also walked up to Arthur's seat which on a nice day was great. All in all plenty to do and would defo go back.

Nice, if you want to spend your evening in the same room as a bunch of obese americans who've just finished some ghost tour or other. Foods reasonable but definitely not the best edinburgh has to offer.Fine dining i'd go for number 1 at the balmoral.
Bit more casual is Olorroso on castle st, its on the roof so offers excellent views over the city and out to the firth.
For informal quick dining I quite like the mussel inn on rose st.
Drinking wise I;d go tigerlilly on george st for cocktails or if you're more a pub person, rose st or the grassmarket will see you good.
Rowdy Pubs - Grassmarket
More upmarket - George Street, Leith down at the harbour(good restaurants down that way now, as well as the Royal Yacht Britannia)
Good drinking pubs Cafe Royal, Guildford Arms, Malt Shovel, Teuchtars in the west end
Witchery/Secret Garden are cracking restaurants.
Howies is good middle of the road food, they have a few restaurants in various places around town.
Room in the Town is similar to Howies, always been good and is located in the New Town, they have a sister restaurant in the west end, below Teuchtars cunningly called a Room in the West End, these are also byob with a minimum corkage charge
There are a lot of decent restaurants in Edinburgh, competition means the crap ones fold sharpish.
Hope that helps.

Grass Market tends to be quite student heavy, Rose St can be quite touristy. Stay away from anthing called Revolution etc.. You'll have good fun if you stick to the older style pubs and probably get a good laugh.
Def do the climb up Arthurs Seat. If it's a nice day take a picnic. Note that nice day up here means not raining, everything else is good.

That's my local
It's a great little place and, yeah, the food is pretty good for pub stuff. The Castle can be a pain to queue for at the weekend, but I think it's worth going in, if only for the views from the top. The Camera Obscura just down the hill is pretty interesting too.
I'd second George St for the "better" bars and restaurants but, as always, you pay a slight premium for that kind of thing. Olo Rosso is an excellent rooftop restaurant near the Charlotte Square end, but this time of year it'll be a bit too chilly to eat on the terrace, although there are decent windows in the main bit.
Talking of food with views, The Overlook on George IV bridge is a good italian overlooking (hoho) the castle.
Time 4 Thai is an excellent and affordable Thai place (funnily enough) on North Castle St, just off George St.
Grassmarket (below the castle down from Victoria St & Greyfriar's Bobby) has a few little eateries and pubs - Mama's is a lovely little pizzeria that does an excellent optional spicy tomato sauce base.
If you're into seafood, get down to Fisher's on Leith Shore. Or even if not, give Malmaison down there a try too. HMS Britannia is moored down there next to Ocean Terminal (big shopping centre, cinema etc).
That should cover a few things
