Fried. Then mashed. Add some fried pressetta (sp - those little chunks of cured ham) Bowl of mixed leaves salad, topped with the meat, sweet chilie sauce and a few cherry tomatoes.

Unbeatable.

Surely the question is fried or boiled? I've always gone the fried route but some northern relatives will only eat it boiled - proving there's nowt so queer as folk!

According to friends in Bury Lancs, the correct way is to boil them, which after tasting the ones from Bury Market I must agree with! Frying does tend to make them lose a lot of flavour... all IMHO of course!

Blimey that sounds good.

I do a "three meats" roll.

Chicken thigh, boned. Stuff with sausagemeat (I will now try black pudding). Wrap in streaky bacon. Roast.

Mmmm. With mashed potatoes and steamed broccoli.

As its seasonal...

Cut your Pudding into 1cm slices, fry on both sides until crisp.

While that is happening steam a bundle of Asparagus and mix up a raspberry vinigrette

When the asparagus is cooked so it just snaps when bent arrange on plate with a small amount of butter, crumble the black pudding over and drizzle with the vinigrette.

Alternatively cut a ciabatta into 2" squares, flash fry or toast on one side. Find a similar size pudding and slice very thinly, flash fry along with similar size bacon and top with a quails egg. Serve in a canape style with a good espresso.

If it's a particularly smooth one then a nice blood pate goes down well with some toasted french bread.

Otherwise fry it, some caramelised onions and a dash of Worcestershire sauce
