Something I haven't seen for years and which I still love to see when I can - if you can find a wreck - a Riley Pathfinder. An SM has been mentioned and 1. we would expect to see it on the road in 10 years because 2. you will have spent at least five years in psychiatric care in the process. If you want to go off the wall how about one of the early Japanese cars like a big Toyota Cressida? Not worth it financially but - how many have you seen in the last few years?

An Alfa, Bristol or the Alvis are tops at the moment.
Don't like the SM particularly and imagine it would be difficult enough to find one let alone restore it! The TVR Chimaera is just too new.

Lancia Aurelia - one of the prettiest cars ever designed, not to mention the world's first production V6 and the fact its principal design engineer was Vittorio Jano - his other famous creation being the D50 GP car.
A TD21 is a fantastic suggestion - see if you can find a Graber-bodied Alvis - that would be rare, I've never seen one for sale!
How about a Citroen Traction Avant? I think a TA has to offer the highest ratio of style per pound spent of just about any car. Decent examples start at around £7K and you'll always feel a touch smug about having such a slinky motor!
