East Coast Must Dos

I'm travelling up the East Coast (currently at Nelson Bay in Port Stephens) fromn Sydney to Cairns and I'm keen to get to see some stuff that is outside the touristy trail. I've started a thread in Holidays & Travel but if anyone on here can help or make any suggestions that would be great.
