I would say most hire companies would not let you drive anywhere near salt water. It might be worth getting involved with local 4x4 clubs and seeing if you can get a drive. Depends on how long you plan to stay but I would even consider buying as cars seem relatively cheap here in Tassie.

Erm there's the... mmm er. Na.Somewhere west of Hobart is a bridge walk thing through some trees, and a rope bridge. There's a cafe there you can get a brew.
You can look at lots of roads splattered with more dead animals than you've ever seen.
Salamanca has a market every so often where you can buy things and some pubs to eat and drink in.
