Great Things To Do Within Driving Distance of Sydney

I am currently in Sydney and have a hire car for the next three days (Wed - Fri). This seems like a good opportunity to do things or go places that are a outside if the city, hard to get to by public transport, or unique to the area.
Ideally I need to be back in Sydney at night but can be away Thursday night.
I can appreciate what is great to someone is tedious to another, as an indication I am not averse to a good view, quite like a bit of a walk, can be impressed by big structures, and like good/ different restaurants. Obviously I also like standard PH motor based pursuits, off road riding, quad biking, etc.

I'd suggest a drive to Bathurst, via Bell, Have a look at the Zigzag railway down into Lithgow on the way. Then a slow lap or two of Mount Pam circuit, a public road when no racing. Then through Sofala, Rylstone & Bylong through the ranges to Denman. A bit of firm gravel still in places probably, but good driving, & virtually no traffic from Bathurst north.
From there back down the putty road, one of Australia's best drives, to Richmond or Hornsby & the big smoke.
If on the Putty road in the early morning watch for patches of frost on shaded corners.
Anyone who doesn't enjoy that lot does not like driving.

Many thanks for the replies. Ezakimak, I am almost disappointed that you have chosen to get there going north/anti-clockwise as opposed to starting out south and going clockwise round the coast. Regardless I may save this for a 4 day hire, there is also an additional fee to drive outside of NSW which I will have to look into.
