QLD: things to do?

I've got friends coming over for 2 weeks for Xmas/NYE to see me in Brisbane, so was starting to think about some things to do while they're there - and it will give me a chance to see some more of the area as I'm normally working! Aside from Brisbane city things, I was thinking:
- Road trip down to Sydney (ideal would be NYE but accommodation seems full/expensive) and stop off at a few places on the way (Byron Bay?)
- Day trips to Gold Coast/Sunshine Coast - beach etc
- Theme parks on Gold Coast
- Fraser Island trip - will my standard Disco 3 be ok for this?
- Trip into the mountains
Bad time for a trip down the coast to Sydney, school kids & caravans everywhere.
Bad time in general as everything at peak price, but still not too bad.
Yes your disco will handle Fraser Island with no trouble, but if you have no beach experience do go steadily, as washouts are hard to see for inexperienced, & do kill people. Get your camping gear ordered now, or hirer's will run out.
Get out on the water. A Tangalooma trip from Redcliff, or Brisbane is a good day, as is a trip up the broadwater from the gold coast. Try a day out on a yacht, or rent a house boat down the coast, & cruise the waterways as your own master.
The wineries up around Stanthorpe are worth a visit too, & there is even one in Mount Cotton.
