I do not know if you have any other motorsport facilities over there. Best bet would be to get yourself in a car club with a strong motorsport scene. Look on www.cams.com.au for clubs that centre around motorsport.
Note that the word trackday is often used for bike events here. Car trackdays are usually called tuning day, practice day, driver training day etc.
Also note that at proper circuits there are rarely road car only tuning / track days unless a club or individual organises one. Most 'trackdays' involve just going along to a regular tuning day at a circuit and mixing it with racers doing some genuine testing and guys just out to thrash their road car around. Certainly over here in WA even on a tuning day people try pretty hard and in some fearsomely fast road cars so keep your wits about you.
It is also not like the UK in that with serious racers out there it is accepted that you will be overtaken under braking and through corners.
Your other option is to just chuck yourself in to competition and start running in time attack and sprint events.
Not sure about your local circuit but you might need an AASA or CAMS L2S competition licence and you might need a 1kg extinguisher and battery location triangle on your car to run there. Give them a ring to see.
