Flatting clear coat (ASAP)

Never really painted much but doing a colour change on some trim so primed, then color and baked for 4 hours at 80C in the oven leaving to cool overnight. Then this morning two coats of clear and back into the oven for (I'm guessing 6-7 hours, plus an hour to cool at ambient).
Am I alright to lightly dry flatten (2500) then a final clearcoat before rebaking overnight again or is this rushing it?
The trim is right infront of you (mini dash) so needs to be good or it will forever look naff.
