If you're lowering the whole strut because the spring has sagged then isn't there a danger that the strut is still going to bottom out - it'll just do it with the chassis higher off the ground?
I suspect that spring spacers would be a better fix for sagging springs. These can either fit under the end of the spring to move the spring relative to the strut, or between the coils of the spring to increase the effective spring rate.I haven't used either type but they seem to be relatively well known things.

To add a bit of jeopardy to your original question unfortunately, if your car was lowered properly (as in correct length dampers for lowered springs) then fitting these spacers will likely result in the dampers "topping out" which could cause some serious handling issues.
If that is the case then you will need to also fit OE dampers as well as springs.
If you only experience the issues on bumps then in fact it could easily be the dampers that are the issue rather than the springs.
I find it hard to imagine a car that would have 205 & 255 both as a recommended size on the same car, are you sure both are recommended?
Also, that is not the whole story as the wheel offset may have been changed also, are they standard wheels or aftermarket?
