Triumph 2000/2500MK2 V8 options?

I've always liked the Triumph 200 MK2 range. I now live in the USA and am thinking about a resto-mod project for one of these by dropping in a V8. I'd also like it to be LHD and I know you can pick them up on the continent with factory LHD.
Anyone any knowledge/experience of what V8's have been installed in these cars?
I know there were a few with Stag engines and Rover V8's have been popular swaps too. I am thinking along the lines of something more modern, probably a US V8, maybe with an auto, adding AC (due to where I live) and maybe 250-300hp more for comfortable road trips.

I'm planning (with much procrastination) on doing much the same here in the UK.
My plan started out as dropping a Stag V8 in there, something that was done on one or two cars for directors at the factory and for a few more cars by Del Lines. Stag engines aren't chap though and only make 13BHP more than a 2.5PI so probably less than a 2.5EFi.
Back in the day swapping the Triumph V8 for the Rover/Buick one was quite common - but it was never a particularly good engine, just easier to get hold of in the UK.
Which brings us to the Lexus 1UZ-FE. Basically the same size as the Rover, better, more reliable and more then enough powder for a 2000.
