TVRCC do several track days a year which are very friendly, well organised and safe. Also quite a bit cheaper than most of the commercial track days. But you do need to be a TVRCC member. (There are other reasons why you should join the TVR CC too.)

I've tried TVRCC days at both Oulton Park and Croft and thoroughly enjoyed them both, even as a novice. A benefit of the CC days is the possibility of free instruction which is definitely worthwhile.
Airfield wise, I can recommend the Easytrack days at Wroughton - good value at around £80 - but budget a bit extra(!) for tyres and fuel.
One thing I would say is try somewhere reasonably close to home at first - you can end up feeling a bit knackered at the end of the day.

I too would highly recommend the TVRCC days - they are well organised (I know of some 'track days' that are little better than un-marshalled free-for-alls) and the quality of (free) instructors is generally excellent. No matter what driving experience you have, the instructors will almost certainly be able you to make some improvement in your skill and enjoyment. Plus, all cars are relatively equal in terms of performance, which helps both slower and faster drivers alike.
With regards to the 'best' circuit, that's very subjective, and unless/until you've driven a circuit, you'll never know whether it suits your driving style.
What I can tell you for sure is that I've thoroughly enjoyed all the TVRCC track days I've attended; Croft, Mallory, Oulton, Snetterton.
