I have no experience of the brakes in question but I do have Brembo 4 pot on my Chim.
My only observation would be 6 pot might shift a lot of fluid so you might experience a longer brake pedal travel before the brakes come on which shouldn’t be much of a problem when your used to it and you can always adjust the pedal height anyway.
The first and only real thing I noticed after putting the big Brembo’s on was this slightly longer pedal travel which is probably about 6 to10 mm which feels a lot at first but within days I’d all but forgotten about it.
The Brembo brakes are phenomenal with 4 pot so 6 should do the job no bother.
If they are as well engineered as the Brembo the progression you get with more pistons soon becomes fascinating as you will have a finite level of foot to brake caliper control.

Fitted these on my second Griff, everything seemed excellent quality and was easy to fit, they look a lot better than the standard cast calipers. Good value for billet calipers and they also use off-the-shelf disks, so you're not talking hundreds of pounds every time the disks need replacing. I'd gone for the 280mm disks which fit comfortably inside the 15" Estorils and the braking was a big improvement on standard.
I never bothered but probably should have done something about front to rear braking bias after fitting as it was easy to lock up the fronts but the same would apply to any front upgrade.
