Does anybody know exactly what the difference between these services would be?
I have a 2018 Ford Mondeo which I bought this year, it had been dealer serviced by the previous owner and I had a scheduled service (60,000 mile) done recently. It really was pretty expensive. What would I be missing out on if I had the essential service in the future? Is it worth going to the main dealer? If it is then would the scheduled service be worth the extra expense over the essential service?

It’s likely the “Essential service” (Evans Halshaw, by any chance?) from the dealership will be just an oil & filter change, and using aftermarket rather than genuine components.
The manufacturer scheduled service will (well, should!) be performing the operations due at the stated age/mileage using genuine parts & the recommended oil.
Ask them what the difference is.
